Coconut Ginger Sticky Rice

Drool! Try this recipe for Coconut Ginger Sticky Rice and top with a protein of your choice. Adding seaweed to your diet not only adds umami-goodness, it’s also a great way to increase your intake of essential vitamins and minerals like iodine, magnesium, and iron.

Ingredients

  • ¾ cup brown rice⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • ¾ cup frozen riced cauliflower⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 cups cold water⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 cup unsweetened canned coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 Tbsp fresh grated ginger⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • ½ Tbsp coconut aminos⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • ¼ cup Blue Evolution Alaskan Dried Kombu ⠀⠀⠀⠀⠀

Method

  1. Combine all ingredients in a sauce pot and bring to boil.

  2. Cover, reduce heat to a simmer and cook for 35-45 minutes longer.

  3. Remove from heat, fluff with a fork and enjoy!⠀⠀⠀⠀⠀⠀⠀⠀⠀
