Sea Beans

Have you ever tried sea beans? Also called salicornia or samphire, these briny bites are actually crisp succulents that grow along shorelines. Here at Blue Evolution, we’re all about promoting the full range of nutrient-rich sea vegetables and these little babies pair beautifully with our kelp pesto. Check out the recipe below.

Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 pound sea beans (can be found in some gourmet markets)

  • 1 Tbsp extra-virgin olive oil

  • 1 shallot, sliced thinly

  • 2 cloves garlic, minced

  • 1 dollop seaweed pesto (see recipe by clicking the link in bio)

  • Roasted pine nuts⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Method

  1. Bring a large pot of water to a boil. Add sea beans; cook for 30 seconds.

  2. Drain and place the beans in a bowl of ice water. Drain and pat dry.

  3. Heat a large skillet over medium-high. Add oil, onion and garlic, and sauté for about three minutes or until crisp-tender.

  4. Add the sea beans and cook a few more minutes until sea beans are warmed through.

  5. Serve with a dollop of seaweed pesto and roasted pine nuts!⠀⠀⠀⠀⠀⠀⠀
