No-Bake Seaweed Infused Oat Bars

Keep your distance learners sharp and focused by preparing yummy, no-bake, seaweed-infused oat bars! These are a great snack for kids, parents, or anyone in your home who needs a nutrient rich pick-me-up. ⁠

Ingredients

  • 1 ½ cup rolled oats⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

  • 1 cup salty crackers, finely crushed ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

  • 1 ½ cups unsweetened coconut flakes⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

  • 1 cup sesame seeds, toasted⁠

  • 1 package of Blue Evolution Dried Alaskan Wakame, finely chopped or ground⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

  • 1 ¼ cups smooth peanut butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

  • ½ cup honey⠀⠀⁠

  • 1 tsp pure vanilla extract⠀⠀⠀⠀⠀⁠

  • ¼ cup miniature chocolate chips 

Method

  1. In a large bowl, combine oats, crushed crackers, coconut flakes, sesame seeds, and seaweed.

  2. In a separate bowl, combine the peanut butter, honey, and vanilla extract.

  3. Microwave the peanut butter and honey mixture for 30 seconds, then add the two mixtures together and stir well.

  4. Allow the mixture to cool for at least 10 minutes, and then add the miniature chocolate chips.

  5. Mix until the chips are evenly distributed throughout. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

  6. Scoop the mixture onto your hand and mold into a rectangular, granola bar-type shape OR into balls!

  7. Optional: Roll in sesame seeds or coconut to keep them from sticking together.

  8. Wrap the oat bars in parchment paper and store in the refrigerator until firm. Serve chilled and enjoy!⁠
