Cast Iron Seaweed Pesto Pizza

Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 ball of store bought pizza dough ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • ½ cup of seaweed pesto⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 pint of shiitake mushrooms, thinly sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 pinch of chili flakes ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 medium sized onion, julienned and caramelized⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 3 small shaved rainbow carrots ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 Tbsp sriracha ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 Tbsp of lemon juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 Tbsp of olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • ¼ cup sesame seeds ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • A few cilantro sprigs ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • ¼ cup semolina flour for rolling out and stretching your pizza dough ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 tsp black pepper⠀⠀⠀

Ingredients for the Pesto⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 cup olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 cup toasted pine nuts ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 6 pan-fried garlic cloves ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 5 Tbsp chopped Kombu or Blue Evolution Kelp Puree⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 Tbsp fish sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 3 Tbsp parmesan cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Juice of half a lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 Tbsp rice vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 pinch red chili flake⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Method

  1. For the Pesto: Combine all ingredients into a food processor except olive oil; slowly drizzle olive oil with the processor running. Feel free to add more olive oil if you want a loser consistency. Season to taste. Store in a mason jar with a tight lid and use on avocado toast, veggies, breakfast scramble, the possibilities are endless.

  2. Preheat your oven at 450 degrees Farenhiet. Toss shitake mushrooms with siracha, pinch of sea salt, one tablespoon of olive oil, then separately toss shaved carrots in the lemon juice, olive oil, and black pepper.

  3. For the caramelized onions: In a medium skillet over medium heat, add olive oil. Add onions and cook, stirring often, until starting to soften. Reduce heat to medium-low and continue to cook, stirring often, until light golden brown consistency, 20 to 30 minutes.

  4. For assembly: Dust your pizza dough with semolina flour, roll out and stretch out to your liking, lay the pizza dough on your cast iron skillet, spread ½ cup of the seaweed pesto, spread out to cover the entire base of the pizza, sprinkle the caramelized onions, then add the shaved carrots, and lightly season with sea salt. Set in the oven, and bake for about 20 minutes until your crust is toasty. Garnish, with fresh cilantro and sesame seeds.⠀⠀⠀⠀⠀⠀
